Homemade Cheese Spread Recipe Ingredients for 60g of cheese spread: For making the cheese: - 500ml full-fat milk - Juice of ½ a medium-sized lemon For the cheese spread: - Chhena (prepared cheese) - Pinch of salt - 3-4 tbsp fresh cream Instructions: 1. Begin by making the chhena. In a saucepan, pour 500ml of full-fat milk and bring it to a boil. Once it reaches boiling point, turn off the heat and add the fresh lemon juice. Stir for about a minute until the milk curdles and separates into cheese (chhena) and whey. 2. Place a muslin cloth over a strainer and strain the chhena to separate it from the whey. Rinse the chhena under cold water to remove any lemony flavor. 3. Transfer the chhena to a blender or mixer jar. Add a pinch of salt and 3-4 tablespoons of fresh cream to the chhena. Blend them together until you achieve a smooth and creamy consistency. 4. Congratulations! You have successfully made your homemade cheese spread. It is rich, creamy, and can be stored for a long time. Enjoy it as a spread on bread, crackers, or in your favorite recipes.
